We want to examine and revitalize our University’s relationship with the food it
consumes. With a focus on residence cafeterias, we are working towards
maximizing the environmental, social, and economic sustainability of this
institutional supply chain.
Currently, the McGill Food Systems Project is
taking steps to make this vision a reality. By using student research,
classroom knowledge now informs cafeteria purchasing decisions. For example, a
3rd year class determined the need and helped in the creation of a sustainable
food purchaser position. Their project was proposed and accepted by McGill Food
and Dining Services (MFDS) and McGill Sustainability Fund (MSF). Thanks to this
collaboration,its implementation is due in 2010.
In just 1 year, McGill’s
food providers have committed to integrating local food into meals all year and
to promote monthly Local Food Days. We are also making links in the community
and within our own institution, for example by sourcing fruit and vegetables
from our own Farm.
