Inspired by his travels across Mexico, Chef Bahena features a monthly changing
menu of Mexican celebratory dishes, game, and little known regional specialties,
all creatively reinterpreted in his own rustic, yet sophisticated style. Los
Moles, are the house specialty. Using only the freshest ingredients, Chef
Bahena’s goal is to serve you seasonal, sustainably raised vegetables, meat,
poultry, and fish. Los Moles Restaurant supports local growers of organic and
gourmet legumes as well as artisanal farmers. As part of our commitment to the
environment, Los Moles Restaurant strives to incorporate green practices such as
recycling waste, using recycled items, and using environmentally safe cleaning
chemicals to reduce the negative impact on our environment.
