We milk our own pastured herd of dairy goats and make cheese by hand in our
licensed creamery. We use organic vegetarian rennet, and no preservatives.
Cheeses are aged two months or more, and have natural rinds.
We feed
certified alfalfa hay and feeds, containing NO soy or wheat. We are in the
transitional year for organic certification. We are approved by the Animal
Welfare Institute for our high welfare animal practices.
We want to make the
most nutritious cheese possible.
